Meet Matti Fallon – Broadsheet Kitchen’s Second Resident Chef

Broadsheet in partnership with AAMI Business Insurance is thrilled to announce Matti Fallon as the second resident at Broadsheet Kitchen. Housed inside Saint Crispin on Smith Street in Collingwood, Victoria, Broadsheet Kitchen is the exciting new dining experience helping budding Australian restaurateurs get their start.

Starting from the 6th of March, Matti Fallon will be taking over the Broadsheet Kitchen at Saint Crispin with his fond take on the suburban Chinese food he grew up adoring. Drawing from his childhood memories, Fallon is aiming to put his twist on classics – think super-crunchy lemon-chicken skin with lemon dipping sauce; high-concept prawn crackers made from sausage shavings; three-texture wontons in broth; and sweet and sour pork with Sichuan crumb.

Growing up in the Mornington Peninsula, Fallon started his food career in his teens. Since then, Fallon has worked at some of Australia’s top restaurants and worked under a handful of esteemed chefs like Dan Wilson, Matt Lane, Scott Eddington and Hugo Reis. In mid-2018, he opened Princes Pies, a vintage-style pie shop in Melbourne’s CBD. 

During his residency at Broadsheet Kitchen, Fallon will be mentored and work under the guidance of Saint Crispin’s talented head chef, Stuart McVeigh. In an interview with Broadsheet, Scott Pickett, owner of Saint Crispin, expressed his excitement to see Fallon’s concept come to life, “offering up a cuisine that hasn’t been explored in this kitchen before”.
